<p>1 cup ricotta</p>
<p>handfull of toasted pistcahios and slivered almonds</p>
<p>1/2 cup fresh fruit</p>
<p>honey to drizzle</p>
<p>currants to sprinkle</p>
<p>ciabatta toast to serve</p>
<p>Assembly:</p>
<p>1. Divide the ricotta into thrids and place one third on the plat, then drizzle some hone and nuts.</p>
<p>2. Repeat the process two times to achieve the layered ricotta</p>
<p>3. Serve with toast on the side</p>

<p>A visit to Bronte’s Favoloso is able to transport any surf-seeker from its suburban beach side location to a little corner of Siciliy; where rich and intensely aromatic coffee is served alongside homemade paninis, and strictly authentic goods and produce are within arms reach.</p>
<p>Favoloso, part café, part delicatessen has all of this on offer, keeping any quixotic Italophile seriously happy about its convenient neighborly position.</p>
<p>The café prepares its meals and paninis daily, making good use of imported and local produce- with the locality of one of their most famed suppliers- Iggy’s bread- fittingly siding across the road. Everyday fresh and crusty ciabatta and sourdough loaves are provided to Favoloso into which go crisp basil, vine ripened tomatoes, cured meats and Italian cheeses.</p>
<p>Exhaustedly veering off the crowded path of Sculptures by the Sea, there is thankfully a quiet spot outside the Belgrave Street haunt. The breezy and shady tables outside Favoloso provide the perfect setting to collect oneself over a full-frothed cappuccino, the paper and a late Sicilian breakfast of ciabatta toast with fresh ricotta, warmed honey, currants, toasted pistachios and almonds ($14.50).</p>
<p>After a few minutes of respite and three coffees later, Favoloso’s grocery store within the café catches my eye. Acting almost like your local corner store, it bears your Sunday morning basics- homemade jams, farm eggs, bacon, the paper- it’s one stop shopping at it’s best! Though it does not showcase your Tip Top White or Streets Cornetto’s- of its corner store predecessor- Favoloso deli offers an exotic assortment of Italian small goods. With the selection ranging from olive oils, vinegars, preserved lemons, dry and fresh pasta, Italian cheeses and your other essentials.</p>
<p>Favoloso well and truly does have its fingers in as many pies as possible. Along with hosting Italian cooking classes and family style dinners they also hold a small seasonal market within the store during the summer months run by the exuberant Sicilian fruiterers.</p>
<p>Favoloso certainly provides a fitting presage to its English translation – fabulous!</p>

			<content:encoded><![CDATA[<p>This is a delicious recipe and one of my favourites! Full of rich mascarpone cream and italian liquer it is destined to be a dinner party hit! I first came across it while watching Italian Food Safari on SBS and have made it several times since&#8230;&#8230;..</p>
<p>Ingredients<br />
3 egg yolks<br />
60g caster sugar<br />
500g mascarpone<br />
40ml Strega<br />
20ml Sambuca<br />
1 packet savoiardi biscuits<br />
100g dark chocolate, chopped<br />
1L hot coffee<br />
Ground coffee</p>
<p>Italian meringue<br />
100ml water<br />
250g caster sugar<br />
125ml egg whites<br />
Preparation</p>
<p>Place the egg yolks and caster sugar in a mixing bowl, and whisk on high speed until pale and fluffy.<br />
Add the mascarpone and, on a medium speed, whisk until it starts to thicken. Be sure not to overmix as you may split the mascarpone.</p>
<p>Add the liqueurs and mix until just combined. (You may adjust the quantity of liqueur according to personal taste.) Place to one side and make the Italian meringue.</p>
<p>Add the water to a clean, grease-free saucepan, then slowly add the sugar, making sure that all the grains get wet. Place over a medium heat and bring to soft ball stage.</p>
<p>Making sure that your mixing bowl is completely grease-free, add in your egg whites and whisk on high speed until white and fluffy. As your egg whites reach medium peak, start to slowly add your hot sugar. Once all the sugar has been added, continue to whisk until the Italian meringue has completely cooled.</p>
<p>Take your Italian meringue, and carefully fold into the mascarpone mix. Taste and adjust the amount of liqueur if necessary.</p>
<p>Take your sponge finger biscuits, and soak in the coffee, a few at a time. Give the biscuits a light squeeze to remove any excess coffee. (Try not to soak your biscuits all the way through. There should still be a little portion in the middle that has not been soaked in the coffee.)</p>
<p>Line your bowl with the biscuits. Once the bowl has been completely covered with the biscuits, sprinkle with a little of the chopped chocolate.</p>
<p>Add a little of the mascarpone mix, coming up the bowl one-third of the way. Cover with more coffee-soaked sponge finger biscuits, and sprinkle again with the chopped chocolate. Place some more mix onto the sponge finger biscuit, coming up another one-third of the way up the bowl. Repeat this process once more, levelling out the mix with the top edge of the bowl.</p>
<p>Place in the fridge, and allow the tiramisu to become firm enough to cut, minimum 2 hours.</p>
<p>Just before serving, sprinkle with freshly ground coffee.</p>

<p align="center">Our local talented and fun-loving chef Tom Kime has had an exciting few months and is now welcomed back to Favoloso to host the third series of cooking classes, providing you with top kitchen tips and the confidence to make delicious food all the time.</p>
<p align="center">With many recent successes including the birth of his beautiful son, Alexander and the release of his new Sustainable Fishing book ‘Fish Tales’; we are excited that he can be with us for this next series of classes.  Tom has written five books, writes for Delicious magazine and appears regularly on Ready Steady Cook in Australia,  Market Kitchen and with Rick Stein for the BBC.  He has just presented his own TV series called Tom’s Kitchen in New Zealand.</p>
